Pineapple Vanilla Rum

This recipe has been in my collection for so long that I can’t remember where it came from. I do know that I made it for the first time for a party years ago and it was really popular. I served it over ice with Orangina and everyone absolutely loved it.  Which made me realise that it would be a perfect gift for Christmas. Why not share the love?



  • 2 26oz bottles of white rum
  • 1/2 pineapple, cut into cubes
  • 2 vanilla beans, sliced and seeds removed

Pineapple Vanilla Rum

Into a big bottle (sorry, I have no idea how big it is) I dumped everything in including both the vanilla beans and the seeds, sealed it and stuck it in a closet.

About a month later I strained the liquid through a coffee filter and poured it evenly into 6 9oz glass bottles that i found at one of my favourite kitchen stores.

A word of advice: don’t eat the pineapple. Unless you want to feel like you’re dying while chewing on solid booze. The boyfriend was my guinea pig and, after watching him choke and almost spew, I decided to turf the rest into the bin before i could be forced to try a piece myself. *evil laugh*

If you decide to make this yourself (which I do suggest!), try it with Orangina. so nice!
