That’s a pretty strong statement to make, isn’t it?
While many of you are probably screaming at your screens, telling me to stay in my own lane, I’m over here licking delicious creamy garlicky oh-so-amazing tzatziki off of a spoon at an alarming rate without a care in the world.
I made this to have for the rest of the week, but I don’t actually know if it will last 2 days. It’s that good. Promise.
One very important step to remember is to remove as much liquid from the cucumber as possible. This is vital, otherwise you’ll end up with watery runny tzatziki – rather than the desired creamy deliciousness you’ll fall in love with.
1 extra long english cucumber, grated
2 cloves garlic, minced
2 c fat free greek yogurt
1/2 c dill, minced
1/4 c freshly squeezed lemon juice
1/2 tsp salt
1/4 tsp freshly ground black pepper
Squeeze grated cucumber, then place it in a fine mesh metal colander. Lightly salt the cucumber and set it over a bowl for 30 minutes. Give it another good squueze, then place it in a bowl. Add the rest of the ingredients, mix to combine and adjust seasonings depending on your tastes.
