As soon as you mention eggs, most people think of breakfast or brunch. personally, I don’t discriminate and love traditional ‘breakfast’ food any time of day. A perfect example is this sandwich I recently made for dinner.
My friend slash colleague and I talk food almost non-stop, so it’s not uncommon for us to share meal planning. We bounced ideas back and forth on what I should make for dinner that night, and this is the delicious result.
Lightly toasted sourdough topped with buttery sautéed mushrooms, topped with a perfectly cooked over-medium fried egg, topped with ooey-gooey homemade cheese sauce. Oh, and chopped chives and freshly ground pepper.
